luscious lemon curd

If you’ve spent any time at all reading my other posts, you’ve likely started to see a pattern emerging with my recipes: easy, easy, easy.  I’m not one to spend hours in the kitchen, with the exception of holidays and other special occasions.  But I want my food to taste as if I did, so I do my best to try recipes that promise to pack a lot of punch with minimal effort.  This recipe is another one of those.

Although I like to cook simple and easy, I shy away from using the microwave to cook things.  Of course, it’s great to melt butter and chocolate or soften cream cheese if I’m in a hurry.  But I almost always use the stove or oven to do the actual cooking.  But even I couldn’t resist the allure of making a great tasting lemon curd…in the microwave.

I’ll admit I was skeptical.  I became a believer, however, the moment I tasted the finished product.  Creamy and smooth with a nice lemon punch, this lemon curd is better than any store-bought brand I’ve tried.  Use it in place of any recipe you have that calls for lemon curd, or just enjoy it warm out of the (microwave) oven!

Luscious Lemon Curd

  • 3 tablespoons lemon zest
  • 1/2 cup fresh lemon juice (2 to 4 lemons)
  • 1 1/2 cups sugar
  • 8 tablespoons butter
  • 3 eggs, lightly beaten
  • 2 egg yolks, lightly beaten (together with the whole eggs)
  • Put your butter in a large glass bowl.  Microwave on high for 10 seconds, or until the butter is soft but not melted.

    Whisk in the sugar, lemon zest and lemon juice.   Add the whole eggs and yolks and blend well.

    Cover with parchment paper and microwave on high for 3 minutes, stirring well after each minute.  Continue until mixture thickens and coats the spoon.  You might need more or less time depending on your microwave.

    Cover and refrigerate at least an hour.
