jellopwAs much as I’m continuously trying to please the adult noodle fans, there’s no getting around the fact that I’m a mom.  And that many noodlers are moms, too.  And let’s face it, when the kids are happy, we’re less apt to need a nip from the cooking sherry.  Always a good thing.

My girls adore this recipe, and so do I.  What mom doesn’t love an easy, fun recipe that the kids can help with?  Of course, this is usually my bargaining tool to coerce my kids to not act like kids for five minutes (and occasionally it even works).  It’s likely many of you likely already have this recipe tucked away somewhere, but the end result is so darn pretty and it’s so fun to see little faces light up - especially when they “made it themselves” – that I thought it worthy of a post.  So moms, this one’s for you!

  • 1 (3 1/2 ounce) package Jello gelatin, any flavor
  • 1/2 cup warm water
  • 1 1/2 cups miniature marshmallows or 12 large marshmallows

Spray a square baking pan – an 8 or 9 inch size - with cooking spray.  I usually double this and use a 9×13 glass pan. 

Mix gelatin and water in a microwavable mixing bowl.

Cook on high 1 1/2 minutes, then stir to dissolve completely.

Add marshmallows to gelatin.

Microwave one minute or until marshmallows are almost melted.  I had to do this step a few times because my marshmallows were ancient artifacts and didn’t want to melt.  I also had to add some colored ones because I ran out of the big size.

Stir until completely melted and mixture is smooth (creamy layer will float to top).

Pour into prepared pan.

Refrigerate 45 minutes or until set.

Loosen edges with knife dipped in warm water.

Starting at one end, roll up tightly.

With seam side down, cut into slices.

 Don’t throw away those end pieces!

Place on a serving plate, and allow your adoring fans to think you’re a rock star.
