Shredded Buffalo Chicken Sandwiches with Blue Cheese Celery Slaw
Okay, folks, here’s recipe #2…for the Saucy Mama Extraordinary Condiment Contest! I’m really excited about this one, even more than the stuffed poblanos I made a few days ago. For starters, I adore hot wings with blue cheese – the hotter the better. And this recipe only took me about 10 minutes active prep time to make – and you know how I love something quick and easy but tastes awesome! I poached my chicken breasts (straight from the freezer – the meat turns out nice and juicy!), but a store-bought rotisserie chicken would work just as well if you wanted to cut the time down even more. I LOVE the Saucy Mama wing sauce – it’s got heat without losing its flavor. I think this is the winning recipe, guys – cross your fingers!
Shredded Buffalo Chicken Sandwiches with Blue Cheese Celery Slaw
- 4 medium-sized chicken breasts
- 1/2 cup Saucy Mama’s Hot Wing Sauce
- 3 cups coleslaw mix
- 1 celery stalk, diced
- 1/2 cup blue cheese, crumbled
- 1 cup mayonnaise
- 1 T. apple cider vinegar
- 1 T. dijon mustard
- salt and freshly ground black pepper
Place chicken breasts in large sauce pan, cover with water by 1 inch. Bring to a boil, partially cover the pan and simmer ten minutes. Turn off heat, and let chicken sit in poaching liquid another 10 – 15 minutes, until cooked thoroughly.
While chicken is poaching, whisk together mayonnaise, vinegar and mustard. Add diced celery, crumbled blue cheese and coleslaw; mix thoroughly and season with salt and pepper.
Remove chicken from pan and shred using two forks. Place in bowl and add hot wing sauce, just enough to coat the chicken. Serve chicken on a soft hamburger-style bun with a generous portion of blue cheese celery slaw right on top. Pass extra wing sauce at the table. Serve with corn on the cob and some cold beer!
Tip: If you’re using a rotisserie chicken that’s no longer hot, or if your chicken has been refrigerated, let it come to room temperature, then heat your wing sauce before tossing with the chicken. Your chicken will dry out if you microwave it, but the heat of the wing sauce will warm it up just enough without drying it out.

I am addicted to anything and everything buffalo saucy. Drool!!!!
Wings though I always am a huge fan of sauce on the side and a good solid spicy dipping sauce paired with blue cheese. Great I am freaking drooling now…….

Oh YUM! I am baking two chickens as I write this – a little “power” cooking so I have a lot to work with – salads, casseroles and of COURSE this recipe! I saw the headline in my email and added chicken to my list before I even had time to read the post! We adore blue cheese and I’m making this recipe this weekend – a million thanks!
Okay. Since you’ve been to my blog, you can probably guess that when I first saw your site I was VERY INTIMIDATED. Terrified, actually. BUT…after checking out the Buffalo sandwich recipe, I felt hopeful. I am going to TRY it. Delicious. Tasty. Awesome. Better dripping wtih extra sauce too. Just made this sandwich with a few substitues necessary only because I didn’t want to run to the store. Made the “slaw” with chopped baby spinach and shredded carrots on the mandolin. Also added some BBQ sauce to the wing sauce to tame it down a tad for us. Would make it full strenght for others. Just AWESOME. Thanks again!
