Isn’t life a wonderful thing?
I was recently given the opportunity to take over cooking for two clients for a personal chef who was moving on to full time work. Taking my “career” into this direction had never occurred to me. I was excited…and incredibly nervous.
I am terrible at stuffing chicken breasts. I pound out the chicken, make the stuffing, add said stuffing to said chicken, and things roll along pretty smoothly. Then…the stuffing never, ever stays where it’s supposed to. It inevitably oozes out the sides and all over the pan. I know, I know…toothpicks should do the trick, right? Sadly, not in my case. I’m hopelessly stuffing-challenged.
Just a quick post today so I can squeeze in this delicious salad! It’s easy, healthy and delicious and a big hit at our dinner party!

When the Alaskan Seafood Marketing Institute (ASMI) contacted me about trying their straight-from-freezer-to-oven cooking technique, I (of course) jumped at the chance. Fish, especially salmon, is very popular on our dinner table; my two young daughters devour it which makes it an especially appealing choice.
