This easy avocado and egg recipe comes together in less than 15 minutes!

Simply split an avocado in half, crack in an egg and toss it in the oven. Top with whatever you like – I prefer green onions, cilantro & a little diced jalapeno with a squirt of sriracha – but it’s all good!

With a good sprinkling of salt and a spoon Avocado Baked Eggs are delicious just by themselves but there are also endless variations. Simply carve enough of the avocado out to stuff everything you want to add or add it on top. Here are a few topping ideas:

  • Meat: Cooked and crumbled chorizo or bacon, turkey bacon, shrimp, crab, or smoked salmon
  • Garnish: Parsley, green onion, chives or cilantro
  • Cheese: Grated parmesan, shredded cheese, mozzarella, cotija, crumbled feta or ricotta cheese
  • Veggies: Chopped tomatoes, cucumber, bell peppers, lettuce, spinach leaves, mushrooms, radish, red onion, corn

This avocado and egg recipe is easy to prepare, healthy and delicious on its own or with endless variations and toppings.

Ingredients

  • 2 avocados
  • 4 eggs
  • 1/2 lime
  • Kosher salt & freshly ground black pepper
  • Assorted toppings of your choice

Instructions

Oven Baked Avocado Eggs

  1. Preheat oven to 425°F.
  2. Split avocados in half and remove the pit. Gently scoop out some of the pulp to make the hole bigger (I do about two spoonfuls) to make more room for the egg.
  3. Place avocado halves on a baking sheet, using the side of the pan to help hold them up and stabilize them. Drizzle each with a little lime and season with kosher salt and a little freshly ground black pepper. Crack an egg in each hole, allowing some of the whites to run out (just make sure the yolk stays put).
  4. Bake for approximately 15 minutes or until whites are set and yolk is at desired consistency. Top with whatever you like or just enjoy as-is!

Air Fryer Avocado Eggs

  1. Preheat air fryer to 400°F.
  2. Split avocados in half and remove the pit. Gently scoop out some of the pulp to make the hole bigger (I do about two spoonfuls) to make more room for the egg.
  3. Place avocado halves in air fryer, optionally use tin foil cups to stabilize them. Drizzle each with a little lime and season with kosher salt and a little freshly ground black pepper. Crack an egg in each hole, allowing some of the whites to run out (just make sure the yolk stays put).
  4. Bake for approximately 10 minutes or until whites are set and yolk is at desired consistency. Check the eggs halfway through since air fryer models vary in cook time. Top with whatever you like or just enjoy as-is!
