Crunchy Cinnamon Topping in 2 minutes

This is not the prettiest dessert I’ve ever made. It may even qualify as one of the least appealing of the past five years, but I assure you that the soft dough against the crunch of the cinnamon topping is a delicious treat that is well worth the five minutes it takes to put it together.
I was testing a recipe for Kikkoman (what, cinnamon isn’t the first word that comes to mind when you think of Kikkoman products? ;) and I needed to do it quickly. And I was hungry (translation: no patience). Plus I just happened to have a tin of crescent rolls in my fridge that needed to be used up. The perfect coffee cake storm.
The topping was actually created for use in Kikkoman‘s coffee cake recipe. And after trying it, I’m putting it to the very top of my list for things to make for special breakfast treats this holiday season. I just LOVED the crunchy topping!! Spread over a coffee cake batter and baked it would be divine. But if you find yourself in a hurry like me, just spreading it over crescent rolls is a speedy alternative. Their secret is using panko breadcrumbs! I use panko all the time for any number of savory recipes but I can’t recall ever using it for something sweet. Brilliant!

Crunchy Topping Coffee Cake
- 3 cups flour
3/4 cup granulated sugar
3 teaspoons baking powder
1 teaspoon salt
1 teaspoon baking soda
2/3 cup butter flavor shortening
2 eggs, beaten
1 cup buttermilk
Topping:
- 1 cup brown sugar
- 3 teaspoons cinnamon
- 1 stick melted butter
- 1 cup Kikkoman Panko Breadcrumbs
- 3/4 cup chopped pecans
Instructions
Sift together dry ingredients, flour, sugar, baking powder, salt and sugar. Cut in shortening until mixture look like coarse meal. Combine egg and buttermilk, stir in to flour mixture. Spread into a greased rectangle aluminum dessert sheet (13 x 9). Sprinkle with topping and bake at 350° for 30 minutes until firm in the middle.

Wow, this is so fast! I could actually see myself making this on any given morning – I don't generally have enough patience / caffeine early enough to cook breakfast food.

Really awesome contest you held here! Too bad I missed it. Still, the recipe for this cinnamon topping is just great. It is certainly not too complicated to make, but I can just imagine it tasting so good. Heck, I might just make up a batch of the topping itself and scoop it on top of some ice cream.
