Easy Hash Brown Quiche Recipe

This easy quiche recipe has hash browns for both the crust and a crispy hash brown top. The ham, asparagus and swiss add wonderful flavor, it’s a must try!

This easy quiche recipe is very creamy from the egg yolks and the hash brown crust adds a wonderful contrast in texture. This dish is made with ham, asparagus and swiss cheese but I’ve also included several variations that work great with a hash brown crust. It’s the perfect Easter quiche recipe or for any occasion!

Hash Brown Quiche Ingredients

  • Frozen shredded hash browns: I used frozen shredded hash browns so I could skip shredding all those potatoes (that’s what makes this such an easy quiche recipe) but feel free to use homemade hash browns. 3 1/2 cups are needed for this recipe which is about a 20 oz bag.
  • Butter
  • Kosher salt
  • Eggs
  • Heavy cream
  • Whole milk
  • Diced ham: Cooked diced or cubed ham, perfect for a leftover ham recipe.
  • Shredded swiss cheese & asparagus: You can substitute any cheese and vegetable combination that you prefer. Cheddar cheese, crumbled goat cheese, shredded fontina and crumbled feta are all excellent choices.

How to Make Hash Brown Quiche

  1. Hash Brown Crust: Form the hash brown crust and bake until potatoes are lightly browned.
  2. Egg Mixture: Whisk eggs and egg yolks until pale yellow and frothy. Add cream, milk and remaining salt.
  3. Bake the Quiche: Sprinkle ham over the hash brown crust then top with shredded cheese. Pour the egg mixture and place the asparagus spears on top.
  4. Top with More Shredded potatoes: Top with remaining Shredded Hash Browns and broil until hash brown top is golden brown.

Hash Brown Quiche Recipe Ideas

Use these variations to substitute the ham, swiss cheese and asparagus while following the rest of the recipe.

Ham, Cheddar Cheese & Onion – 1 cup diced ham, 1 cup shredded cheddar cheese, 1/4 cup chopped onion or 3 tablespoons green onions. Season with freshly ground black pepper in addition to the salt.

Sausage, Cheddar and Monterey Jack Cheese & Scallions – 1 cup sausage, 1/2 cup cheddar cheese, 1/2 cup Monterey jack cheese and 2 whole scallions. Choose your favorite type of sausage.

Bacon, Gruyere, Onion, Garlic – 1 cup bacon, 1 cup Gruyere (or Cheddar), 1/4 cup chopped onion or baby spinach, 1 garlic clove (minced). Season with freshly ground black pepper in addition to the salt.

Shrimp, Broccoli, Mushrooms, Provolone Cheese – 1 cup shrimp, 1 cup provolone cheese, 1/4 cup broccoli florets, 1/4 mushrooms, 1 tsp chopped chives.

Asparagus Substitute – Another green vegetable like green beans, broccoli, zucchini, or green bell peppers will work in a pinch.

More Veggies – You can easily add a couple of diced veggies into this dish such as chives, onion, green onions, bell pepper, mushrooms, spinach, or scallions.

Another Protein- You can make this with bacon, canadian bacon, spam, sausage, ground turkey, crab, smoked salmon, shrimp, or even cubed extra firm tofu.

Hash Brown Quiche Tips

  • For an extra crispy crust, be sure to squeeze as much excess liquid as possible.
  • Press the hash browns into the pie pan as evenly as possible, up the sides and around the bottom to make an even crust.
  • Keep an eye on the quiche as it bakes. The hash brown crust should be cooked until the potatoes are lightly browned along the edges and bottom.

This Hash Brown Quiche recipe is crazy flavorful, easy to make and the shredded potatoes form a wonderful golden brown crust.

Ingredients

  • 3 1/2 cups (20 oz bag) thawed and drained, frozen shredded hash browns
  • 1/2 cup butter, melted
  • 3/4 teaspoon kosher salt, divided
  • 3 eggs
  • 3 egg yolks
  • 1/2 cup heavy cream
  • 1/2 cup whole milk
  • 1 cup diced ham
  • 1 cup shredded swiss cheese
  • 5 stalks asparagus, tough ends discarded

Instructions

  1. Preheat oven to 425°F.
  2. In medium bowl, mix together shredded hash browns, melted butter and 1/4 teaspoon salt. Press all but 1 1/2 cups of potato mixture onto the sides and bottom of a 9-inch pie pan to form a crust. Bake for 20-25 minutes or until potatoes are lightly browned and remove from oven.
  3. Meanwhile, whisk eggs and egg yolks in large mixing bowl until pale yellow and frothy. Add cream, milk and remaining salt; mix thoroughly.
  4. Reduce oven temperature to 350°F. Sprinkle diced ham over hash brown crust then top with shredded cheese. Carefully pour in egg mixture. Place asparagus spears on top, lightly pressing into egg mixture. Bake for 25 minutes or until top is browned but quiche is still very slightly underdone.
  5. Remove quiche from oven and cover top of quiche with remaining Shredded Hash Browns. Be sure to cover edges so they don’t burn. Place back in oven and broil for 5-7 minutes until quiche is completely cooked and hash brown top is golden brown.
  6. Remove from oven and let set for 15-20 minutes before serving. Quiche can be served warm or at room temperature.
