Earlier this week, I was one of the lucky food bloggers chosen to attend the Good Egg Farm Tour just outside Portland, Oregon. I had the opportunity to meet so many great people, including (but definitely not limited to) Jeffrey Saad and Howard Helmer. It was a whirlwind trip but so much was packed into a very short time that it seemed as if we were there for much longer! (<——- a good thing)
I’ll be sharing this great experience with you next week in two posts – one dedicated to the Willamette Farm and the other to what it was like to cook with Jeffrey and Howard (including tips on making the BEST omelettes and scrambled eggs – it’s not what you’d think)!

Our chickens make our own Incredible eggs! When we get too much we like to make German pancakes because it uses up a lot of eggs! We also love a good omelet with cheese and ham topped with salsa!
At our house, we make "Brinner," Breakfast for Dinner. We make a twist on an egg bake with cream cheese, chives, plenty of cheese and a full dozen eggs. Delicious!
The majority of my eggs end up in chocolate chip cookies or in dinner rolls. I would love an omelette pan and learn how to make fabulous omelettes!
I love to cook with my dutch oven.

Okay, so I do the omelet thing every Sunday morning but recently have been big on making this awesome spinach pie. It has become my "go to" dish when you need to take a meal to a neighbor. AND – can take it to some vegetarians as well. I also give my show dogs 2 eggs each day to keep their coat healthy and shiny.
Slow-scrambled eggs, made with lots of butter and finished with a drizzle of truffle oil. Divine!
OHH!!! I hope I'm not too late!! It's just to hard to pick my favorite egg dish, but I will tell you one of my favorite THINGS about eggs. They are a great source of protein that even my pickiest kid will devour!! All three of my boys love eggs and I never need to worry that they won't finish them.
If I HAVE to choose I would pick super fast scrambled eggs with a little cheese on top!
