Still deciding what to make for your Super Bowl party tomorrow? Here’s a super-fast recipe for Spinach Artichoke Dip that will make your life much easier. You can head into the kitchen now to mix the ingredients then just pop it into the oven right before game time!
I’ve made this Spinach Artichoke Dip a zillion times. The last time I made it, I had an idea that I was certain would be fabulous. Instead of buying artichoke hearts, I bought artichoke bottoms. If you’ve ever eaten a fresh artichoke, you know that the bottom is always the meatiest, most delicious part. So it stood to reason that making the switch to bottoms from hearts would put my dip over the top.
Ummmmm…NO. Not even a little bit. It kinda ruined it, actually. I was shocked and a little disappointed. I thought I had the secret to improving upon what didn’t need improving. The flavor was there, but the texture just threw the entire thing off. So, a word of advice from me to you: make sure you stick with hearts. And enjoy this yummy recipe – it’s perfect as is.
Hot Spinach Artichoke Dip
- 1 box frozen spinach , squeezed thoroughly in a hand towel
- 1 can artichoke hearts
- 1 cup good-quality mayonnaise
- 1 cup shredded mozzarella cheese
- 1 cup grated parmesan cheese, plus more for sprinkling on top (optional)
- one garlic clove, minced
Mix all ingredients together and place mixture in baking dish. Sprinkle with more parmesan cheese, if desired. Bake for 20 minutes at 375F or until hot and bubbling. Serve immediately with tortilla chips.
