Loving on Leftovers

Last week I co-hosted a class on how to turn your Thanksgiving leftovers into something delicious and unexpected. There were a lot of fabulous tips and recipes shared, including the lovely Sloppy Joe sandwich above. I had a fabulous time (I always love working with TheMotherhood!) and am happy I get to share all the best tidbits from the class with you! Here’s a teaser:
An informal left-upper survey of the 10 blogger co-hosts revealed a few interesting Thanksgiving tidbits – eight of them agreed that leftovers are one of their favorite parts of the holiday, and six admitted that their families deliberately prepare too much food with the expectation of having leftovers.
“So, out of curiosity, how many leftovers do you ladies usually have at the end of a Thanksgiving meal? Ours is almost shameful,” said Stephanie, Goober Monkey.
“We always make extra so there are leftovers,” replied Deb, Just Short of Crazy.
“I always seem to have a lot left over so this is good to know I can make ‘Left Uppers,’” added Migdalia, Latina on a Mission.
Kasey at All Things Mamma noted, “I’ve heard so many people say that they aren’t fans of leftovers, but if they turned them into left-uppers – I bet they’d change their minds!”
“The great thing about Thanksgiving leftovers is that they all go so well together so you can combine them into almost anything – sandwich, quesadilla, fried cakes, etc,” agreed Kristy, The Wicked Noodle.

I love leftovers! I loved the shepard's pie recipe you posted a few days ago, so perhaps I will try this one too. Plenty of turkey left at my house!

Hmm… sloppy joes. I certainly wouldn't have thought of that one myself! Thanks for ideas, I'll look up the recipe.
I also make way too much food – my family is small and I want to serve a variety of dishes, and that means that almost nothing gets finished completely. Luckily, we all love leftovers as well!
Fried cakes! That sounds like the perfect thing to do with leftover stuffing. Will you post a recipe, or did I miss one that you've already posted?
I can't say no to leftovers. In between all of the holiday parties and the amazing seasonal sales at the grocery store, my fridge is stocked with leftovers all month long.
That looks like a great idea! I love Thanksgiving leftovers, but for some reason not a fan for the rest of there year. Maybe I have to just think outside of the box.
The only reason why I love having leftovers, especially
for Thanksgiving, is because I don’t really even want to eat during the
dinner. It's so tiring to be a hostess and to cook all day, so having some
leftovers is something that I like to enjoy all by myself afterward! :-)
This is why I always buy a big turkey for Thanksgiving!
I do love leftovers but with all the cheese and sauce, I
wonder how I can store them and how long can I keep them. My daughter is just
three year old and I am worried of food poisoning.
Wow! It’s time for leftover food party! Sweet potatoes, the turkey, the dressing and the sandwiches!
