It’s hard to believe this is my fourth and final recipe for the Wholly Guacamole campaign. I have had such a great time over the summer and into the fall coming up with recipes, trying their different products and having the pleasure of giving away some really great prizes. This has, by far, been one of my most favorite products to work with! Back in July we began with breakfast, then brunch, lunch and finally…dinner! {I may try to convince them to keep things going until we get to midnight snack!}

These shrimp cake tortas are TO DIE FOR. Shrimp mixed with mexican flavorings then topped with a spicy cilantro sauce, creamy guacamole, queso fresco cheese and a roasted poblano! All on a buttery toasted bun (and don’t skip the toasting of the bun, it adds such a nice texture to the sandwich). If you prefer to make it a bit more upscale, skip the bun entirely and just serve the shrimp cakes with the goodies on top. Cilantro rice and black beans would make great sides or you could even just serve it all over greens. We even had it for brinner (breakfast + dinner) and topped it with a fried egg!
