I am constantly on the lookout for new and innovative ways to cook with fish, and Mahi Mahi is a personal favorite. This white fish is incredibly versatile and pairs well with bold or spicy flavors, allowing for a wide range of creations.
I’ll often pick some up in the summertime, toss on some blackening rub and throw it on the grill for a healthy dinner. Mahi Mahi, also known as Dorado, is a fish that is recognized by its vibrant hues of blues, greens, and golds. Despite being referred to as a Dolphin fish in some regions, Mahi Mahi are not related to dolphins. In Hawaiian, Mahi mahi means “strong” because these fish are very strong swimmers.
Mahi mahi has a mild and sweet flavor with a firm and yet tender texture and moist flakes. It’s popular in a variety of dishes because it readily absorbs many flavors and spices and is a healthy choice as it is low in fat and calories, while being a good source of lean protein. Mahi Mahi can be grilled, baked, fried, air fried, pan-seared, steamed, or even used in ceviche. The ideal internal temperature for Mahi Mahi is to aim for 135°F to 140°F. The FDA recommends an internal temperature of 140°F degrees F for cooked Mahi Mahi or any fish. However, at this internal temp, Mahi Mahi tends to be dry, tough, and hard to flake with a fork.
