Every summer I seem to gravitate toward a particular vegetable and that becomes my “thing” for the season.

This summer, it seems to be fresh corn off the cob.

I’ve been using fresh summer corn in darn near everything…fish taco salads, sweet corn cake & chorizo poppers, mexican quinoa casserole and in more freshly chopped salads than I could ever possibly post on this blog {like this one with lemon garlic dressing}. I even made a summer corn & potato chowder that is one of my all-time favorite soups (especially since it’s very healthy because of my secret weapon ingredient). And this charred corn salad sounds fantastic!

It wasn’t until I was making my favorite black bean soup the other day that it occurred to me that the fresh summer corn I had picked up that morning would be fantastic in it.

I’m a smooth, creamy soup kind of girl but I am madly in love with the texture and sweet balance that the fresh corn brings with it. Don’t even bother cooking the corn beforehand, it doesn’t need it. I rarely cook my corn unless I’m serving it on the cob or in a dish where it’s all being sauteed or baked (although occasionally a quick saute over high heat with a pat of butter and a little salt can be heaven).

Straight from the cob into salads, soups, onto crostini with creamy cheese and ripe tomatoes…fresh is, without any doubt or hesitation, the way to go with sweet summer corn. And I know that you will especially love it in this creamy, smooth black bean soup.

Black Bean Soup with Fresh Summer Corn

Yield: 4 servings
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 medium red onion (chopped (reserve a tablespoon for garnish, optional)
  • 2 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 2 cans black beans (no need to drain)
  • 2 cups low-sodium chicken stock or broth
  • 2 ears of corn (kernels removed and cobs discarded (reserve a few tablespoons for garnish, optional)
  • 1/2 cup cilantro, chopped and divided
  • kosher salt & freshly ground black pepper

Instructions

  1. Saute chopped onions over medium heat until soft. Add cumin and garlic, saute for 2 minutes more.
  2. Add black beans and chicken stock. Simmer for 15 minutes.
  3. Using a hand blender, puree soup until very smooth. Stir in 1/4 cup chopped cilantro and corn kernels, then continue to heat soup until very hot.
  4. Ladle into bowls and garnish with reserved chopped red onion, reserved corn kernels and remaining chopped cilantro.
  5. VITAMIX OPTION:
  6. Add cooked onion mixture, black beans and chicken stock to Vitamix blender. Start on Variable 1, quickly to 10 and then to high. Blend for 5 minutes or so or until soup is very smooth and hot. Season to taste with kosher salt and freshly ground black pepper (at least 1/2 teaspoon salt or more). Stir in 1/4 cup chopped cilantro and corn kernels. Pour into bowls and garnish with reserved chopped red onion, reserved corn kernels and remaining chopped cilantro.
