How about a little background before I tell you about this fantastic Buffalo Chicken Egg Salad?
Rob and I started eating Keto about six weeks ago. It’s been such a fun journey and I’ll be telling you all about it in an upcoming post. As fun as it’s been, there has been a learning curve in terms of what we can eat, how much and why that’s all so important.

This simple recipe came about because Rob came home from work one night and decided to mix a packet of the StarKist Chicken Creations™ BOLD Buffalo Style with a couple hard-boiled eggs. He couldn’t stop raving about how delicious it was.
So, of course, I had to take it one step further.
I mentioned that we’re eating keto and it’s perfect for that. But this Buffalo Chicken Egg Salad genuinely the best version of egg salad I’ve ever had, so I will eat it whether I’m doing keto or not. The creamy combination of buffalo sauce and mayo, the crunch from the celery, flavorful blue cheese and premium, white meat chicken that’s sourced from American farms (raised cage free and hormone free) work perfectly together!

Buffalo Chicken Egg Salad
- 6 hard-boiled eggs, chopped
- 1/4 cup mayonnaise
- 2 celery stalks, chopped
- 1/4 cup blue cheese, crumbled
- 3 pouches StarKist Chicken Creations™, BOLD Buffalo Style
- coarse salt and freshly ground pepper, to taste
Mix all ingredients together in a medium-sized bowl. Refrigerate until ready to serve. (Tip: allow to chill for at least an hour before serving to allow the flavors to develop. It gets even better the longer it sits!)
