How about a little background before I tell you about this fantastic Buffalo Chicken Egg Salad?

Rob and I started eating Keto about six weeks ago. It’s been such a fun journey and I’ll be telling you all about it in an upcoming post. As fun as it’s been, there has been a learning curve in terms of what we can eat, how much and why that’s all so important.

One of our favorite snacks since the start is StarKist Bold Tuna Creations, Hot Buffalo Style. I’ve always loved all of the flavors but it’s an entirely different thing when you’re eating Keto since you really need to read nutrition labels.

I checked out the nutritional information and was thrilled to learn that their Buffalo tuna has zero carbs and sugar, just 1g fat and 15g protein! This was especially great for me since I was struggling with getting in all my protein for the day.

I love them so much that I’ve ordered them through Amazon by the case. That may sound excessive, but trust me – they never last long.

So when StarKist asked if I was interested in trying their new StarKist Chicken Creations™, I was over the moon! I love the tuna but a little variation is always a good thing. It comes in four delicious flavors: BOLD Buffalo Style, Zesty Lemon Pepper, Ginger Soy and Chicken Salad and is PERFECT for eating straight from the pouch!

My girls love them, too. I’ll be sending some to school with them once that ramps back up and Rob grabs a couple every morning on his way out the door. They’re single serve, plus you don’t have to drain them so you can just tear, eat and go!™ Or, in their case, go, tear and eat! :)

Buffalo Chicken Egg Salad

This simple recipe came about because Rob came home from work one night and decided to mix a packet of the StarKist Chicken Creations™ BOLD Buffalo Style with a couple hard-boiled eggs. He couldn’t stop raving about how delicious it was.

So, of course, I had to take it one step further.

I mentioned that we’re eating keto and it’s perfect for that. But this Buffalo Chicken Egg Salad genuinely the best version of egg salad I’ve ever had, so I will eat it whether I’m doing keto or not. The creamy combination of buffalo sauce and mayo, the crunch from the celery, flavorful blue cheese and premium, white meat chicken that’s sourced from American farms (raised cage free and hormone free) work perfectly together!

There are four flavors and we love them all. But the Hot Buffalo Style is our go-to and family favorite, so here is a little more information about it:

StarKist ® Chicken Creations™ BOLD Buffalo Style Hot Buffalo is a staple – it’s like being able to take Buffalo wings anywhere you go! It’s prepared with a dash of paprika, vinegar and fiery hot sauce, and is one of StarKist spokesperson Candace Cameron Bure’s favorites.
