The heat finally broke here in VA last week. We’d seen temperatures in the high 90’s for almost two weeks with a lot of humidity, so we were thrilled when it dropped just enough to be able to enjoy some quality grilling time outside with the family!
One of the things that a lot of families struggle with is making dinners that make everyone happy, whether that’s due to dietary needs or just personal preferences. That’s how I arrived at this “Burger Salad”. Rob and I have salads often, especially during the hot summer months, but we also love a good burger! The girls are all about the bun, so we like to make a good burger with high-quality meat, then let everyone decide how they’d like to enjoy it.

For this Burger Salad, I ordered ground beef, red and yellow bell peppers and portobello mushrooms, then grilled it all at the same time. It was so easy to put together, especially since I dressed the greens with a simple mix of Dijon and extra-virgin olive oil to bring all of the flavors together. I also picked up a perfectly ripe cantaloupe for dessert. Peaches would also be a great choice, and they’re one of my favorite fruits for grilling (try it with grilled pound cake and a scoop of ice cream)!
I shopped at Safeway in my local area, but you can also find quality grilling and produce items at the Albertsons Companies family of stores, including Albertsons, ACME Markets, Jewel-Osco, Vons, Randalls, Shaw’s Supermarket, Star Market, and Tom Thumb.
- 1 lb ground beef
- 1 red bell pepper, cut in half, seeds and stem removed
- 1 yellow bell pepper, cut in half, seeds and stem removed
- 3 portobello mushrooms, stem and gills removed
- 1 tbsp extra-virgin olive oil
- 8 cups mixed greens
- 4 slices cheese (any flavor)
- coarse salt & freshly ground black pepper
- Form the beef into 4 patties. Brush the vegetables with the oil.
- Place the patties and vegetables on the greased grill grates over medium-high heat. Cook until the burgers are almost cooked to your liking, then top with the cheese to melt.
- Slice the vegetables and place over the mixed greens. Top with the burgers and enjoy!
A simple dressing of equal parts Dijon mustard and extra-virgin olive oil make a wonderful addition to this easy burger salad.
