These little beauties might be the most fun I’ve had cooking in a long time.
There’s really nothing that I don’t love about these little bites. Tiny enough to pick up and eat with your hands, flavorful enough that they’ll be the first thing to go at your next get-together, and fun enough to make that they’ll definitely be on your weekly menu. I made these for a quick lunchtime treat, but they’d be great for a party, dinner or even a midnight snack!
I had something similar at our local Mexican joint a few months ago, and I remember thinking at the time that it was a clever idea. Their version was meal-sized, however, while these little beauties are party-size perfect. I used small, soft taco-sized flour tortillas and round-shaped tortilla chips. The chips are crucial; you’ll never be able to form the circles without them. And they add a wonderful crunchy texture that no one will expect.
What’s especially great about these is that you can fill them with whatever you like! I used black beans, shredded cooked chicken and cheese, then topped with Wholly Guacamole, sour cream, chopped green onion, cilantro, minced jalapeños and some Wholly Guacamole salsa (did you know they make really yummy salsa, too?). But use whatever your favorites are: shredded pork or beef, refried beans, roasted poblanos, fresh corn, even sautéed peppers, mushrooms or onions. And, if serving at a party (or just for a fun family dinner), set out an array of toppings and let everyone top their own!

Cheesy Chicken & Black Bean Mini-Bites
- 2 T extra-virgin olive oil
- 8 6-inch flour tortillas (soft taco size)
- 16 round tortilla chips
- 1/2 cup black beans (from a can, I mash mine up a little)
- 1 cup shredded & diced cooked chicken
- 1/2 cup shredded mexican-blend cheese
- Wholly Guacamole brand guacamole and salsa, sour cream, chopped cilantro & green onion and minced jalapenos for topping
Place a flour tortilla on a clean, flat surface. Place one round tortilla chip in the center of the flour tortilla. Add a teaspoon or so of black beans to center of tortilla chip, then top with a small amount of chicken and cheese. Fold outside of flour tortilla over chip, moving around the outside of flour tortilla until all edges are folded in (You should have a circular-type shape). Place on plate, folded-side down. Repeat with remaining ingredients until you have eight mini-bites.
Preheat a large skillet over medium heat. Add a T of oil to hot pan, coating entire bottom. One at a the, add mini-bites to skillet, folded-side down, until you have four in your pan. Cook until bottoms are golden brown, then flip and do the same on the other side. If necessary, keep warm in a 200 F oven until all mini-bites are cooked and ready to serve.
Top with Wholly Guacamole brand guacamole and salsa, sour cream, chopped cilantro & green onions and minced jalapeños. Eat every last one with several margaritas and be happy :)
