This chicken chipotle dish is one of the very first I ever prepared.
You may recall that I’ve only been cooking for just under ten years, just before my first daughter was born. And that I had zero, zilch, nada of a clue what I was doing when I first began. That’s when Food.com (formerly Recipezaar, which is what it was when I used it way back when) came to my rescue. I even wrote a post about my love for Recipezaar way back in 2009, very shortly after I launched this site.
I spent hours on that site searching for dishes similar this chicken chipotle recipe that 1) sounded delicious, 2) I thought I could actually make without completely messing it up and 3) didn’t take too long since I was a new mom with a new baby. But I loved it! That was when I first realized that I actually loved to cook and that it was not only NOT going to become the chore that I’d assumed it would but that I actually enjoyed it and looked forward to it. I look back fondly on that time in my life, it always gives me a smile and a bit of a heart tug when I think about it.
I was reminiscing about those days just last week when it occurred to me that it might be fun to do a series on all the recipes I made back then when I was just starting out – most of them were as simple as this chicken chipotle recipe, too. Newbie cooks might appreciate a series like that, yet – since I’ll only share the recipes that we all really loved – everyone can benefit since these are still family favorites even today! I still remember the night I prepared this chicken chipotle recipe. It was super simple but I was so pleased that I had actually made something that tasted so delicious! It was one of the first times I’d ever used chipotle peppers, and omgosh! I fell madly in love. I can’t begin to count the number of times I’ve used them since that day. And I can’t imagine them ever not being a staple in my cooking.
When I made this chicken chipotle recipe again last week I found that it was great fun to be able to just throw it all together and remember how carefully I’d measured each ingredient years ago. This time I didn’t even bother softening the cream cheese, I just tossed all the sauce ingredients into my Vitamix and it was ready in about ten seconds! This chicken chipotle recipe isn’t low in fat or calories but it’s worth it for a creamy, spicy treat once in awhile. Serve it over rice or with a side of cilantro rice and sweet corn cake – delicious!
