We’re one week away from my birthday and I’m already getting ready for it. I always cook on my birthday (a nice dinner at either BRABO or Mokomandy will happen on the weekend) and I like to know what I’m making up front. This year, a few friends will join me and I’m going to whip up this Creamy Chicken Pasta with Sun-Dried Tomatoes and Basil.

I wanted something simple, that won’t break the bank, tastes amazing yet cooks quickly so I don’t have to spend all night at the stove. And who doesn’t love a creamy chicken pasta, right?

Creamy Chicken Pasta with Sun-Dried Tomatoes and Basil

Yield: 0

Ingredients

  • 8-12 ounces fettuccini
  • 2 teaspoons extra-virgin olive oil
  • 1 pound chicken tenders, or sliced boneless, skinless chicken breast
  • 3 garlic cloves, minced
  • 1 can low-sodium chicken stock, so you can control the seasoning
  • 1/2 cup chopped sun-dried tomatoes, more or less to taste
  • 1 cup heavy cream
  • 1/4 cup chopped basil
  • kosher salt & freshly ground black pepper
  • parmesan cheese, for topping (optional)

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, preheat a large skillet over medium-high heat. Add oil; when shimmering, add chicken tenders to pan. Cook until well-browned, flip and brown well on the other side (about 2 minutes or so per side). Remove from pan and set aside. Add garlic to pan (add a tiny bit more olive oil if pan is dry); saute for 1 minute, stirring very frequently. Add a small amount of chicken stock; scrape up any brown bits on bottom of pan. Add remaining stock to pan. Bring to a boil. Add sun-dried tomatoes. Keep at a very strong simmer until stock is reduced by half.
  3. Add heavy cream and chicken to pan, along with any accumulated pan drippings. Bring to a boil, reduce heat and simmer until very hot and chicken is cooked through. Taste sauce and season with salt and pepper. Add cooked fettuccini to pan; toss well.
  4. Place pasta in a serving dish. Sprinkle with chopped basil. Serve immediately and sprinkle with parmesan at the table, if desired.
