A classic apple crisp is the perfect dessert anytime of year, but when fall rolls around and those apples are at their peak of the season, it’s hard to pass up the opportunity to put them to use. I like to use fresh apples for all sorts of treats. Sometimes we simply slice some up and add a sprinkle of cinnamon and sugar, and bake them until soft and tender. We eat them as is, put them on top of ice cream, or stir them into oatmeal. And with all the apple varieties in the fall, it’s fun to try different ones.

Apples – This Recipe calls for Granny Smith apples. These are firm and crisp and hold up well when baking. If you’d like to try another variety, go for Honeycrisp, Braeburn, or Pink Lady apples.

Oats – This recipe calls for rolled oats. If you only have quick cooking oats on hand, those will do just fine, just reduce the butter a bit. Instead of 2 sticks, use one and a half.

Sugar – This recipe calls for both white sugar and brown sugar, and if opting for the reduced calorie version, you’ll be using the Truvia products. The Cane Sugar Blend and Brown Sugar Blend are a mixture of regular white or brown sugar and Truvia’s calorie-free sweetener, reducing calories by about 75%. Truvia products are made from a mixture of stevia leaf extract, natural flavors, and erythritol.

Cinnamon – This adds that touch of warm spice to your apple crisp. If you’re not a fan of cinnamon, you can omit it, but it really does bring out the flavors!

  1. Prep your apples: Peel, core, and thickly slice them and place them in a baking dish.
  2. Mix the sugars: Mix white sugar (or the Truvia Cane Sugar blend), salt, and cinnamon, pour over the apples and toss until coated.
  3. Make the topping: Mix together the flour, brown sugar (or Truvia Brown Sugar Blend), remaining salt, oats, baking powder, and baking soda, then stir in the melted butter, mix until incorporated, and spread over apples until they are covered.
  4. Pop it in the oven: Bake until brown and bubbly and apples are soft, let cool, then serve with ice cream!

Add nuts: If you want a little more crunch, ass toasted or candied chopped pecans or walnuts.

Spice things up: If you want to skip the cinnamon, or add to it, other spices that go great with apple crisp are allspice or cloves, nutmeg, ginger, or even just a dash of pumpkin pie spice.

Make it berry nice: Bake it with a handful of blueberries or boysenberries, or serve them fresh on top after baking.

Change it up: If you like pears, you can swap the apples for pears, or mix a combination of the two.

Top it off: Dress it up with a spoonful of caramel sauce, a sprinkle of candied ginger, or a dollop of whipped cream or Cool Whip.

Storage & Reheating

Storage: Place any leftover fall apple crisp into an airtight container and refrigerate. It will keep for up to 3 days. If you want to freeze it, keep in mind that the texture will change a bit, but it will keep in the freezer for up to one month.

Reheating: Heat leftover fall apple crisp in the oven at 325 degrees for 10 minutes or until heated through. Alternatively, you can warm individual portions in the microwave. Heat in 45 second bursts until warmed through.

Ingredients

For The Apples

  • 6 Granny Smith apples, peeled, cored and thickly sliced (6-8 slices per apple)
  • 1 cup white sugar or 1/2 cup white Truvia Cane Sugar Blend Natural Sweetener, or
  • 1 Tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt

For The Topping

  • 2 cups rolled oats
  • 2 cups all-purpose flour
  • 2 cups light brown sugar or 1 cup Truvia Brown Sugar blend
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 2 sticks butter, melted

Instructions

  1. Preheat oven to 350°F.
  2. Mix together white sugar, cinnamon and 1/2 teaspoon salt. Place apples in a 9x13 pan and toss with sugar mixture.
  3. Mix together remaining dry ingredients, stir in melted butter. Spread topping over apples, covering apples completely.
  4. Bake for 45-60 minutes or until apples are soft and topping is browned and bubbling. Allow to cool for 15 minutes, then serve and top with vanilla ice cream.
