Grilled Pork Tenderloin with Roasted Cherry Salsa

I didn’t think I could love pork more than I already do, and then along came this easy Grilled Pork Tenderloin with Roasted Cherry Salsa. I love all the recipes that I post but this one really stands out.

I say easy because it’s a complete, healthy meal that comes together in just 30 minutes. Because it’s so quick and easy, it’s a great choice for a weeknight yet is sophisticated enough that it’ll easily work for a dinner party.

It will feed four adults and I guarantee there won’t be a bite left!

Grilled Pork Tenderloin with Roasted Cherry Salsa

Of course, much of the flavor comes from starting with Smithfield Marinated Fresh Pork.

Slow-marinated and perfectly seasoned, Smithfield Marinated Fresh Pork is available in an assortment of mouthwatering flavors, such as Roasted Garlic & Cracked Black Pepper, Slow Roasted Golden Rotisserie, or Hardwood Smoked Bacon & Cracked Black Pepper. Their pork is the go-to for a delicious, hassle-free dinner that’s ready in about 30 minutes or less!

With the prep work already done, we simply grill, roast, sauté, or slow-cook it for a meal that’s perfect for any night of the week. It’s also available in a wide variety of fresh cuts, including pork roasts, loin filets, sirloins, pork chops and tenderloins, and can be sliced or cubed for even faster cooking.

This recipe starts with the Roasted Garlic & Cracked Black Pepper Marinated Fresh Pork Tenderloin; the flavors go perfectly with the Roasted Cherry Salsa. And this salsa?? It’s FABULOUS, if I do say so myself!

I add some chipotle pepper for a smoky flavor to balance out the sweet cherries. It’s also great served with tortilla chips (and I’ll often skip the roasting step when serving it this way; I simply allow it some time for the flavors to meld before serving). But you’ll love it with the pork so much that you’ll be making this easy dish every week!

Grilled Pork Tenderloin with Roasted Cherry Salsa

Yield: 0

Ingredients

  • 1 Smithfield Roasted Garlic & Cracked Black Pepper Marinated Fresh Pork Tenderloin, grilled according to package directions
  • 1 cup couscous, cooked according to package directions
  • 1 t olive oil
  • 3 cups whole fresh cherries
  • 1/8 of a medium-sized red onion, coarsely chopped
  • 1 clove garlic, peeled and left whole
  • 1/4 cup cilantro
  • 2 t chipotle pepper, chopped fine
  • juice of half a lime
  • 1/2 t salt, or to taste

Instructions

  1. Preheat oven to 450F.
  2. Place whole cherries, red onion and garlic clove on a sheet pan, then drizzle with the olive oil. Roast for 10-12 minutes, or until cherries are softened. Remove from pan and allow to cool slightly.
  3. {Meanwhile, cook the pork tenderloin and prepare the couscous according to package directions.}
  4. Pit cherries and chop them along with the garlic and onions. Place in a medium bowl and add the cilantro, chipotle, lime and salt.
  5. Serve salsa over couscous and pork. Enjoy!
