Outdoor Summer Eating Made Easy

It’s been WARM here in Virginia and despite the blazing temperature, we’ve been really enjoying getting outside for some fresh air. We’ve been fortunate to have a few really gorgeous days with milder temps, too, and have taken advantage by dinner on the deck!

I’ve been making healthy, easy meals all summer. I use my Instant Pot often which makes dinner-time simpler but there have been a few times I haven’t felt like cooking at all.

I was doing my usual grocery shopping at Safeway a couple of weeks ago when I decided to pick up dinner, too. As soon as I saw the crispy, juicy fried chicken in the deli case, I knew exactly what would make everyone happy!

Fried chicken, freshly cut watermelon, fresh raspberries, blueberries and strawberries plus an apple pie for dessert! I had some coleslaw that I’d made the day before otherwise I would have picked up some of that, too.

Guys, it was SO easy and SO good! Crispy chicken with a side of refreshing fruit? And I didn’t have to cook?

Let’s just say I’ve put this meal on repeat and we’ve enjoyed it twice more since. It’s been especially nice after taking my girls to the pool for the day, then coming home to dinner being ready in a flash. Why not let Safeway do the work for me now and then while I sit back and relax? That’s what summer is for!

Seriously, they have the best fried chicken, prepared deli salads, pies, chocolate chip cookies, and freshly cut produce available at Safeway. I shopped at Safeway in my local area, but you can also find delicious meal solutions at the Albertsons Companies family of stores, including Albertsons, ACME Markets, Jewel-Osco, Vons, Randalls, Shaw’s Supermarkets, Star Market, and Tom Thumb.

Our Safeway meal had plenty for four people and the total cost was much less than if we’d ordered takeout – and it was just as good if not better! We also had plenty of fresh fruit left for breakfast and healthy snacks. And we had pie for dessert two nights in a row.

It was my daughter’s 14th birthday last week. She loved the apple pie so much that she asked for that instead of a cake! We put candles in it just like a regular birthday cake; she couldn’t have been more thrilled!

I also recently picked up some of the chicken salad from their deli, which I loved and plan to buy more. I like to keep it on hand for a quick lunch or if I want just a few quick bites of something to tide me over until dinner.

Safeway also offers Grocery Delivery and DriveUp & Go™ for convenient ways to shop! I’ve only used delivery so far but it’s been a snap. My groceries have always arrived quickly. It really makes my life so much easier, especially since I can order and have it delivered at my convenience.
