Rob and I have been drinking prosecco regularly for a couple years now. It started with Bourbon Mimosas at one of our favorite brunch spots. We’d have a flight every time we went, each in a different flavor.

There are so many ways to enjoy it besides the ubiquitous mimosa. This spritzer is a great example. It is similar to a mimosa but the pomegranate juice is more tart than sweet. I love adding pomegranate arils for presentation and a treat when you get to the bottom.

This Pomegranate & Prosecco Spritzer is so simple to make. First, you’ll pour in a bit of real pomegranate juice.

Fill your glass with ice. You can leave the ice out if you prefer. Sometimes we’ll serve this drink in champagne flutes and we’ll leave the ice out for that.

Now fill the glass with Riondo Prosecco!

I like to add fresh pomegranate arils, too.
