This is a twist on a traditional Niçoise Salad and it’s delicious! I love salads but often don’t find them filling enough. The Niçoise salad fixes that problem perfectly!
What is a Niçoise salad?
The dictionary defines a Niçoise Salad as “a salad that usually consists primarily of olives, tomatoes, anchovies, tuna, and beans or green vegetables.” I usually omit the anchovies (as I do in this recipe but feel free to add some if you like).
Green beans are typically added as well, but I usually go with asparagus since I prefer it. Again, add whichever you prefer, as it’s all healthy and delicious.
Hard-boiled eggs are a must but soft-boiled eggs in a salad can’t be beat. If I have eggs already hard-boiled then I go with those, otherwise I’ll cook my eggs just until the yolk is thick but not fully cooked.
Be sure to use a high-quality tuna (I like Genova) as it will make all the difference! You can even grill a tuna steak if you like, although what I love about this hearty salad is that it’s easy to put together using pre-cooked or purchased ingredients.
The Niçoise salad recipe is for one person but it’s easily doubled, tripled or even quadrupled if you’re making it for a family meal or ladies lunch. It calls for cooked potatoes and asparagus, so I’ll usually plan ahead and grill a protein with some potatoes and asparagus for the sides, making enough to have leftovers.
- 1 can high-quality tuna
- 1-2 hard-boiled eggs, halved
- 4 asparagus stalks, cooked until crisp-tender (you can pop these in the microwave to cook them quickly)
- 1/2 cup cherry tomatoes, halved
- 1 cup butter lettuce, chopped
- 2 tbsp thinly sliced red onion
- 1/4 cup Niçoise olives
- a handful of cooked red potatoes, cut into bite-sized pieces
- 2 tbsp extra-virgin olive oil
- 1 tsp Dijon mustard
- a tiny drizzle of honey
- a squeeze of fresh lemon juice
- a pinch of coarse salt
- a few grinds of freshly ground black pepper
Assemble all of the salad ingredients in a large bowl. Whisk the dressing ingredients together until thoroughly combined then toss it with the salad.
