A sheet pan dinner is simply an entire meal that’s prepared together on one sheet pan. This means that it takes much less effort and cleanup, and it will be done at the same time. My sheet pan dinners tend to be a flavorful, lean protein with a type of vegetable alongside. So easy to eat healthier, even when you’re short on time!

For this sausage sheet pan dinner, I use my favorite all natural sausage. You’ll find many flavors at your local grocer to choose from like Italian, Sweet Apple and Andouille Sausage. I love keeping several flavors on hand for easy meals and we all love it!

Rob and I love spicier sausages but the girls prefer the mild flavors. This sheet pan dinner uses two packages of sausage so I will use one of each flavor and everyone is happy. This time around I also added a package of meatballs to our sheet pan dinner.

For the vegetable, I used broccolini tossed with a little olive oil and parmesan. I had some cherry tomatoes so I threw those on for flavor and color, too. SO GOOD!!

  • Sausage: Choose two packages of your favorite sausage, in any flavor or combination. I used all natural Andouille chicken sausage and some packaged Italian meatballs, but you choose what sounds best to you.
  • Broccolini: Broccolini is a hybrid of broccoli and Chinese broccoli with long stems and tiny broccoli-like “buds” which char nicely in a hot oven.
  • Extra-virgin olive oil or avocado oil: The oil serves as a cooking medium and helps promote browning and caramelization during roasting. It enhances the flavors of both the sausage and broccolini, while also preventing them from sticking to the pan.
  • Coarse salt: Salt aids in the browning process by drawing out moisture from the broccolini, promoting crispiness. It also helps to balance the flavors of the dish, ensuring it is well-seasoned.
  • Shredded Parmesan cheese: Parmesan cheese adds a savory, umami-rich flavor to the dish. When sprinkled on top, it creates a golden, crispy crust during baking, adding texture and depth of flavor.

How To Make Sausage & Broccolini Sheet Pan Dinner

  1. Slice: Cut sausage into 1/2 inch slices (and cut meatballs in half, if using) and place on sheet pan.
  2. Add veggies: Arrange broccolini and tomatoes on sheet pan next to sausage. Drizzle with oil and season with salt.
  3. Roast: Roast for 15 minutes. Sprinkle broccolini and tomatoes with parmesan and roast another 5 minutes.

Ingredients

  • 2 packages chicken sausage, any flavor (or packaged meatballs)
  • 1 large bunch broccolini, thick stems removed
  • 1 tbsp extra-virgin olive oil (or avocado oil)
  • 1/2 tsp coarse salt
  • 1/4 cup shredded parmesan cheese
  • 1/2 cup cherry tomatoes, halved

Instructions

  1. Preheat oven to 425F.
  2. Slice the sausages (and meatballs in half, if using) crosswise into 1/2 inch slices. Place cut-side down on a sheet pan.
  3. Place broccolini and tomatoes on the sheet pan next to the sausages. Drizzle broccolini with oil, then season with salt.
  4. Roast for 15 minutes, then sprinkle broccolini and tomatoes with parmesan. Roast for another 5 minutes or until broccolini is crisp-tender.
