It’s hard to believe this is my fourth and final recipe for the Wholly Guacamole campaign. I have had such a great time over the summer and into the fall coming up with recipes, trying their different products and having the pleasure of giving away some really great prizes.

This has, by far, been one of my most favorite products to work with! Back in July, we began with breakfast, then brunch, lunch and finally…dinner! {I may try to convince them to keep things going until we get to a midnight snack!}

These shrimp cake tortas are TO DIE FOR. Shrimp mixed with Mexican flavorings then topped with a spicy cilantro sauce, creamy guacamole, queso fresco cheese, and a roasted poblano!

All on a buttery toasted bun (and don’t skip the toasting of the bun, it adds such a nice texture to the sandwich). If you prefer to make it a bit more upscale, skip the bun entirely and just serve the shrimp cakes with the goodies on top.

Cilantro rice and black beans would make great sides or you could even just serve it all over greens. We even had it for brinner (breakfast + dinner) and topped it with a fried egg!

Shrimp Cake Tortas with Cilantro Sauce, Guacamole & Queso Fresco

Prep Time: 20 minutes
Cook Time: 15 minutes
Total Time: 35 minutes

Cilantro rice and black beans would make great sides with these Shrimp Cake Tortas or you can serve it all over greens.

Ingredients

For shrimp cakes:

  • 1 pound shrimp, peeled and deveined, then chopped
  • 1 cup coarsely crushed crackers (I use Ritz)
  • 1/4 cup diced red onion
  • 1 serrano pepper, finely diced (I left seeds in but take them out if it’s your preference)
  • 1/4 cup chopped cilantro
  • 1 cup mayo
  • 1/2 t kosher salt
  • 1/4 t freshly ground black pepper
  • 4 soft buns, buttered and toasted under the broiler until golden brown (check them often…I say this from experience)
  • 1/3 cup vegetable oil

For cilantro sauce:

  • 1 large bunch cilantro, stems and all
  • 1 cup sour cream
  • 1 serrano pepper (stem removed; leave seeds in for a spicy sauce or take them out if it’s your preference)
  • juice of 1 lime
  • 1/2 t kosher salt
  • 1/4 t freshly ground black pepper

Toppings:

  • 1/2 cup guacamole
  • 1/2 cup crumbled queso fresco cheese
  • 1 poblano pepper, roasted and skin, seeds and stem removed, then diced (can sub a can of diced green chiles)

Instructions

  1. For Shrimp Cakes: Gently mix together all ingredients (except for vegetable oil). Set aside to allow flavors to blend while you make the sauce.
  2. Make the sauce: Place all ingredients into a food processor or blender. Blend until very smooth.
  3. Form shrimp cakes into four patties, pressing firmly together. Heat vegetable oil over medium-high heat in large skillet until shimmering. Add shrimp cakes and fry until nicely browned (about 5 minutes) then carefully flip and brown the other side.
  4. Place shrimp cakes on toasted buns, then top with guacamole, cilantro sauce,  some diced roasted poblano pepper (optional) and some crumbled queso fresco cheese.

Guacamole is the perfect sandwich glue!! I would pair this with turkey, bacon, tomato, and sprouts. Yum!!

I like to use Wholly Guac on Turkey Sliders. Had some tonight as a matter of fact! Wholly is the ONLY brand of guacamole I use.
