This simple Southwestern Fish & Veggie Bowl comes together in just twenty minutes for a perfect weeknight meal.

School is back in full swing! We’re in the second full week and already we’ve settled into our new routine.
I kinda like it!
Weeknights are busy again, which I’m not a huge fan of, but it does feel good to be back into the swing of things. I’ve been coming up with new weeknight recipes and this Southwestern Fish & Veggie Bowl is already a family favorite!
It’s so simple to make. I just make some rice, chop up some veggies and sauté them or not, depending on my mood. Toss on some black beans, salsa, a drizzle of Sriracha and some Gorton’s Southern Style Artisan Fillets.
I love the crispy, seasoned outside with the soft, tender fish on the inside. Gorton’s fish is fresh-caught and perfectly seasoned. The company has been around for 167 years!! I love that I can keep their fish on hand for a simple, wholesome meal anytime.
I’ve also used regular Gorton’s fish sticks in this Southwestern Fish & Veggie Bowl. Both ways are delicious. It’s just so simple to throw together, it’s hard to believe it has so much flavor!
Any of Gorton’s products would work in this dinner bowl. Even the Shrimp Poppers and Popcorn Shrimp are delicious! My youngest begs me to buy Gorton’s shrimp, it’s her favorite.

- 4 Gorton's Southern Style Artisan Fish Fillets, cooked according to package directions
- 2 cups cooked rice
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 jalapeño, minced
- 1 can black beans, rinsed and drained
- 1-2 cups prepared salsa
- 2 tbsp Sriracha
- Place rice, peppers and black beans in a bowl. Top with salsa. Add Gorton's fish fillets and drizzle all with Sriracha. Enjoy immediately.
