I’m definitely not sure how to feel as I begin writing this post. It’s my last post for the Truvia® brand, for whom I’ve been an ambassador the past two years. That means that every month for the past twenty-four, I’ve created a new recipe using one of their products.
The great thing about my job is that I’m afforded the chance to try products I might not have otherwise tried. I was raised using white, granulated sugar for everything – or brown, depending on the recipe. I don’t know that I would have sought out a product like Truvia® on my own. Now, after using it for two years, I’m certain there won’t be a time when I don’t use it.
I do still keep sugar on hand and I write many of my recipes using it. But Truvia® has earned a permanent place in my daily routine (it goes in my coffee each morning, for starters). Creating recipes with it has been more fun that I ever could have anticipated and working with their team has been a joy!
So, without further adieu, I’m sharing a few of the breakfast sandwiches that I make at least a few times a week for breakfast. I start with a good bread, add a few toppings and drizzle with Truvia® Nectar. The nectar is one of their newest products and I use it in place of honey for so many things. Just like their other sweeteners, you don’t have to use as much (about half) to get the flavor you want while saving on calories!
For my breakfast sandwiches, I usually go with one of these four variations:
- Peanut butter, thinly sliced apple, Truvia® Nectar
- Ricotta cheese, sliced almonds, Truvia® Nectar
- Avocado, crushed red pepper, Truvia® Nectar
- Peanut butter, banana, Truvia® Nectar
For lunch I’ve even been known to drizzle a little of the Truvia® Nectar on a slice of toasted bread and add a slice of good cheddar. It’s really, really addicting :)
I will miss working with these wonderful folks and would like to thank them for two years of really good food and fun! The great thing is that I will keep using this brand that I love for a long, long time. And I encourage you to try these yummy, simple open-faced breakfast sandwiches. They’re all delish!

thanks for sharing this, had heard of truvia, but not as a nectar, the avocado red pepper is one of my regular recipes, so nice twist to add the nectar! love the ricotta and almonds, would never have thought of that one, thanks!
