Through the past few months of staying indoors, the one thing I’ve been most looking forward to is being able to open our deck, put out some brightly-colored plants and flowers and enjoy it all while grilling up some delicious healthy food.

The weather here got nice enough about a month ago and we’ve been using our deck daily! It always feels great to breathe in that fresh spring air and enjoy a family dinner outside, but I know I’m not alone when I say that this year that’s especially true.

Grilled Cajun Shrimp

This Grilled Cajun Shrimp is one of my go-to grilling recipes. It’s healthy, super fast to put together and everyone loves it.

I use corn and asparagus because they take about the same time to cook as the shrimp, but you could substitute fresh green beans, too. The tomatoes get just slightly soft with a decent bite and their sweetness pairs perfectly with the spicy shrimp.

I use a grilling basket to streamline the preparation process but they’d be great on skewers, too. I use one basket for the shrimp and one for the vegetables, but they could go directly on the grill if you prefer.

As for where to pick up high-quality seafood and vegetables, I like to shop at my local Safeway. I’ve been sharing my love for Safeway with everyone for years now and my opinion has never wavered!

Grilled Cajun Shrimp and Vegetables

We’ll even pick up their fresh peaches, brush them with a mixture of melted butter, brown sugar and cinnamon, then grill them for dessert. It’s heavenly!

You can see from the photos that I like to put it all in one big dish for serving. It makes it easy for everyone to load up their plates and it’s only one dish to clean!

For Father’s Day this year, I’m using my parent’s grill and cooking my Dad a socially-distanced but super delicious meal! I’m fortunate because there’s a Safeway on the way when I drive out there, so I know the food I’m making him will be top-notch.

Grilled Cajun Shrimp

Grilled Cajun Shrimp with Fresh Corn and Asparagus

Ingredients

  • 2 lb large easy-peel shrimp
  • 1 tbsp extra-virgin olive oil, divided
  • 2-3 tsp Cajun seasoning
  • 1 lb fresh asparagus, trimmed
  • 1 cup fresh cherry tomatoes
  • 2-4 ears fresh corn
  • 1 tsp coarse salt
  • 1/4 tsp freshly ground black pepper

Instructions

    Preheat your grill to 400F.

    Toss the shrimp with the Cajun seasoning and 2 tsp of the oil. Place the shrimp on skewers or in a grilling basket.

    Toss the asparagus, tomatoes, and corn with the remaining oil then season with the salt and pepper. Place the vegetables in a second grilling basket or directly on the grates.

    Place everything on the grill and close the lid. Grill for about 10 minutes, or until the shrimp are just cooked through and the vegetables are crisp-tender.

    Pile it all up in one big dish for serving or separately if you prefer.
