Instructions
There are just a few steps to make this easy mascarpone french toast. You can make the mascarpone up to two days ahead of time, but it's best made fresh and it only takes a few minutes. It's worth it!

- Next make the whipped mascarpone. It works best if you have a whisk attached to a stand mixer, but a regular hand mixer will also work. Whisk the mascarpone, heavy whipping cream, a little powdered sugar, and some vanilla extract until soft peaks form. Now set that aside to make the french toast.

Storage and Make-Ahead

Let the cooked slices cool completely, then store them in an airtight container in the refrigerator for up to 3 days. Reheat them in a skillet over medium heat or warm them in a toaster oven or air fryer. To freeze, place cooled slices in a single layer on a baking sheet and freeze until solid. Transfer to a freezer-safe bag or container and freeze for up to 2 months. Reheat straight from frozen in a toaster, air fryer, or oven until heated through.
- Whipped Mascarpone: The whipped mascarpone can be made up to 2 days in advance. Store it in an airtight container in the refrigerator. Before serving, give it a gentle stir or quick whisk. Freezing is not recommended.
- Make-Ahead: Whisk the egg mixture the night before and refrigerate it in a covered container. Slice the bread ahead of time as well. When you're ready to cook, just re-whisk the custard, heat the skillet, and you're minutes away from fresh French toast!
