Here is a collection of fantastic Pork Chop Recipes, from healthy to flavorful you'll find a variety of dinner ideas for a busy weeknight.

Pork chops are an easy-to-cook, healthy, lean meat that offers important nutrients like protein, B vitamins, selenium and zinc. Pork chops are great for family meals as they are relatively inexpensive, flavorful, easy to make and there are endless ways to prepare them.

Pork chops should be cooked to an internal temperature of 145 ºF as measured with a digital meat thermometer.

Types of Pork Chops

Here are the five main types of chops: rib, shoulder, loin, boneless, or sirloin chops. The rib and loin chops are the most common types of pork chops you'll find in a grocery store and considered by many to be the best pork chop cuts.

  • Rib Chop (ribeye chop, rib end cut, center cut rib chop): A tender cut from the rib section of the loin. Has a large eye of lean meat with a moderate layer of fat around the outside.
  • Shoulder Chop (blade chops, blade-end, pork shoulder steaks, pork shoulder blade): Shoulder chops, or blade chops, are a darker meat with more fat and connective tissue than other cuts but are very flavorful.
  • Loin Chop (New York chop, porterhouse chop, center-cut or center loin chop): A very lean cut from the center of the loin or the back end that may include a rich, dark piece of tenderloin attached.
  • Boneless Chop (America's Cut, loin filet): A lean versatile cut with no bones, and little fat.
  • Sirloin Chop: (sirloin steak): A cheaper cut, often from the hip area. Contains different kinds of meat which can be tougher and more challenging to cook.

Admittedly it can be confusing because there are many different names for the same cut and the terms get used interchangeably.

All pork chops are cut from the section of the pig that runs from the shoulder to the hip, known as the loin. This is not to be confused with the tenderloin. Pork tenderloin is a boneless cut from the muscle that runs along the backbone of the pig. The tenderloin is about one pound, and visually, is long and narrow. Pork loin is cut from the back of the pig, can be with or without bones, is wider and flatter, and can also be sold in large cuts as roasts.

Boneless vs Bone-In Pork Chops

Whether you're ordering bone-in or boneless pork chops you're still getting the same cut of meat. There are benefits to both so it all comes down to personal preference and how you intend to use it. Here are the benefits to both types of chops.

Benefits of Bone-In Pork Chops

  • More Flavorful: The fat around the bone adds more flavor particularly if you're braising or cooking with other ingredients.
  • Juicier: The bone does a lot to keep the meat from drying out as it's cooked.
  • Classic Presentation: Bone-in is the classic cut.
  • Less Expensive: Any bone-in meat is typically less expensive except for a Tomahawk steak for some reason.

Benefits of Boneless Pork Chops

  • Convenient: Boneless chops are ready to be cooked and easier to eat.
  • Quick Cook Time: Boneless meats have quicker cooking times than bone-in.
  • Easier to Find: Boneless pork is pre-packaged making them easier to find.
  • Leaner Cut of Meat: The bone and excess fat are already removed.

Cooking Methods for Pork Chops

There are many methods for cooking pork chops including grilling, baking, skillet or pan frying (fry, sear, stir fry or sauté), braising, broiling, smoking, slow cooker, air frying, or sous vide! They all have different benefits, conveniences and there's no end of options to what you can create with these delicious chops.
