There's nothing like having the ingredients on hand to make an easy, impressive, and delicious dessert at a moment's notice. This frozen berry pie is so simple to throw together, so be sure to keep frozen berries on hand!

Frozen Berry Pie could also be called Triple Berry Pie since it uses three different types of berries. It's the perfect addition to any meal and, for how incredible it looks, is very simple! Even the lattice top was done freehand and I think it adds a nice "rustic" touch. So don't worry if your crust isn't cut to perfection, it will all taste delicious in the end!
The mix of the three berries combined with the buttery and flakey pie crust makes this a perfect dessert during the holidays, too.

I love using my freezer as a way to store ready-made meals, but I also love freezing desserts. I have a tiramisu recipe coming that I assembled in Souper Cubes for a ready-made dessert, and I always have a few lemon bars or sopapilla cheesecake squares on hand.
This frozen berry pie is almost as easy as having it already made, since I just keep a few frozen fruits and berries on hand. Store-bought pie crusts are so good that I typically will just buy those, too, and keep them stocked.
Ingredients
This recipe has just a handful of ingredients, making it a truly simple last-minute dessert.
- Granulated sugar: This will get mixed with the cornstarch, then tossed with the berries. It sweetens the pie just enough!
- Cornstarch: The berries will get coated in cornstarch, which will thicken the juices while it bakes.
A mix of berries is best, but you can mix and match as you like. Just try to keep the overall amount of berries and fruit the same.
- Frozen raspberries
- Frozen blackberries
- Frozen blueberries
- Frozen peaches
Make a homemade pie crust or use store-bought, either will be delicious. I usually opt for store-bought since it's so nice to have them on hand.

Instructions
- The first thing to do is preheat your oven! It doesn't take long to make this freezer berry pie so you'll want the oven ready when you are.
- Next you'll mix the sugar and cornstarch together in a medium-sized mixing bowl until it's well combined. Then just gently fold the berries into the mixture so they're all coated. This mixture is what will thicken the berry juices as the pie bakes, so it's important to coat all the berries.
- We usually use a cast iron skillet for baking this pie, but a pie pan will also work. You can use either one or two pie crusts, and if you're using two, now is when you'll gently press the bottom crust into whichever type of baking dish you're using.
- Now pour the berry mixture into the bottom crust (or just directly into the baking dish if you're only using a top crust). Spread it out so it's even on the top.
- Now roll out the top layer of pie dough and cut it into thin strips. Lay each strip onto the berries, weaving the strips together using an "over and under" lattice pattern.
- Bake for for 35 minutes or until the crust begins to turn golden brown and the filling is bubbly.

Variations
- Mixed Berry Pie with No Peaches: Substitute the peaches for the three berries in equal parts.
- Cherry Berry Pie: Omit the peaches, raspberries and blackberries. Increase the blackberries to 3 ¼ cups and add 3 cups pitted fresh or frozen tart cherries.
- Bumbleberry Pie: A bumbleberry pie is just a made up word for a random mix of berries used in a pie. This flexible pie uses at least three kinds of berries like blackberry, raspberry, strawberry, and blueberry. Other fruits such as apples and/or rhubarb can be added as well. If you stick to 6 ¼ cups berries and fruits, any combination can be used for a bumbleberry pie.
- Razzleberry Pie: This is another made up berry and refers to a mixture of raspberries and blackberries. Simply use equal parts berries for this pie.

Keep frozen berries and pie crusts on hand so you can make this easy, delicious pie anytime!
Ingredients
- ½ cup granulated sugar
- 3 tbs cornstarch
- 2 cups frozen raspberries
- 1 cup frozen blackberries
- 2 cups frozen blueberries
- 1 ¼ cups frozen peaches
- 9-inch pie crust (ready-to-bake or homemade)
Instructions
- Preheat oven to 400°F.
- In a medium-sized mixing bowl, mix the sugar and cornstarch until it's well combined. Gently fold the berries into the mixture. Set aside.
- Gently press one of the pie crusts into a pie dish or a cast iron skillet (you can use a store-bought or a homemade pie crust).
- Pour the berry mixture into the crust.
- Roll out the top layer of pie dough and cut into thin strips. Weave the strips together over the berries using an "over and under" lattice pattern. Some will hang over the sides, so cut those once everything is weaved together.
- Bake for for 35 minutes or until the crust is golden brown and the filling is bubbly.
Notes
A mix of frozen and fresh berries will also work.
Any berry combination will work, just be sure to have approximately the same amount of fruit overall.
