Hi Dahlia,
You seem to be asking about the only meat I've never prepared, but I'll do my best to answer! If you have a roast, I'd cook it low and slow until it's falling apart, then I'd shred it and use that to top my loaded fries. Or you could cut it into small, bite-sized pieces, sear it, then simmer or braise it until it's tender. You'd just want to be sure that no matter how you cook it, it ultimately ends up in small enough pieces that it doesn't overload the fries and other toppings (you'd want a little of everything in each bite)!
