- 1 teaspoon olive oil
- 1 garlic clove, minced
- ¼ cup heavy cream
- 2 ½ ounces crumbled blue cheese, divided
- ½ teaspoon soy sauce
- 1/8 teaspoon black pepper
Instructions
- Heat the oil in a small saucepan over medium-low heat.
- Add the garlic and sauté for 20-30 seconds or until fragrant.
- Pour in the cream. Bring the cream to a gentle simmer.
- Cook while stirring for 2-3 minutes or until the cream thickens. It is important to stir constantly to prevent the cream from curdling or burning.
- Briefly mash half of the blue cheese and add it to the cream. Stir until the cheese melts. A few lumps are okay.
- Stir in the soy sauce and black pepper. Stir constantly for another minute or so to give the flavors time to meld.
- Turn off the heat, then stir in the remaining blue cheese. You want to turn off the heat to ensure a few crumbles of blue cheese remain. Use the sauce as desired.
