I love easy recipes like this that bring a taste of summer in the middle of all the stews and winter flavors. Roasting or grilling supermarket tomatoes brings out their flavor in the wintertime when you can’t get them fresh!

I spiced mine up with hot sauce but you know I’m a spice fanatic! But its versatility is one of the things I love about it so much. Fresh mango and tomato combine with a little honey, dijon, rice vinegar plus a little onion and garlic for a simple sauce that you’ll want to top everything with! It’s on the sweeter side which plays nicely with the mahi mahi.

First you’ll want to slice your tomato lengthwise (preferably an heirloom, especially if you’re buying it from the supermarket):

Then either throw it on the grill or use a grill pan. You could also pop it under the broiler until it starts to blacken. Whatever works best for you (I used my grill pan):

Next get out your mango:

Use a mango slicer to make quick work of pitting and slicing your mango! Next you’ll add the rest of the sauce ingredients and simmer it for about 15 minutes. Blend it up and if you’d like it even thicker, just pop it back on the stove to simmer awhile longer. I like mine nice and thick!

Mango Barbecue Mahi Mahi

Serve some hot sauce alongside the mango barbecue sauce for those who love a spicy-sweet combination.

Ingredients

For the Sauce

  • 2 medium tomatoes. sliced in half lengthwise
  • 1/2 mango, chopped
  • 1/2 yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon white rice vinegar
  • 1 teaspoon honey
  • 1 teaspoon dijon mustard
  • 1/4 orange juice

For the Fish

  • 1 Mahi Mahi filets, one for each serving; sauce makes enough for 4 servings
  • 2 teaspoons extra-virgin olive oil

Recommended Side: Salad

  • 1 cup chopped romaine lettuce
  • 4 cherry tomatoes
  • 1/2 tablespoon fat-free raspberry vinaigratte
  • 1/4 cup brown rice, cooked according to package directions (or 1/2 cup cooked)

Instructions

  1. Wash tomatoes and lettuce. Peel and chop mango, onion and garlic.
  2. To prepare sauce, grill large tomato with the skin on until it is charred. Remove the charred skin and the seeds (I use a Vitamix and don't bother removing the skin and seeds).
  3. Combine grilled tomato, mango, onion, garlic, vinegar, honey, mustard, and orange juice in a medium sauce pot. Bring to a simmer over low heat and cook for about 15 minutes, or until thickened. Transfer to a blender and puree until smooth. (If not thick enough, place back on stove and simmer until reduced to your desired consistency). Season to taste with salt and pepper.
  4. Meanwhile, prepare fish. Preheat the barbecue until very hot (I use my grill pan on the stove when the weather is too cold for grilling). Season the fish with your salt and pepper to taste and drizzle with olive oil.
  5. Be sure the grill is brushed clean and wiped over with an oiled cloth. Place the fish over direct heat.
  6. Grill the first side for about 3 minutes. Turn over and continue to cook the second side over medium heat.
  7. Baste fish with mango barbecue sauce. When cooked through remove from the grill and serve with rice and additional sauce.
  8. To make salad, toss cherry tomatoes and dressing with lettuce.
