How To Make Keto Desserts

In general, following keto guidelines for desserts means keeping things low-carb and low in sugar, or sugar free. Instead of using regular granulated or powdered sugar, or other high-sugar sweeteners and all purpose flour, you’ll want to use other alternatives. Here are a few of the things you’ll want to keep in your pantry for making keto dessert recipes.

Flour Alternatives

  • Keto Wheat Flour: Made by some baking brands, this is a low-carb blend of wheat flour. Good for most recipes that call for all-purpose flour.
  • Almond Flour: Best used for breads, cakes, and cookies and may result in a a more chewy, dense product. Will add a slightly nutty flavor. You may need to add a bit more almond flour than you would with all purpose flour as it may not absorb the liquid as well.
  • Coconut Flour: Higher in carbs than almond flour, but still approved for the keto diet. This one absorbs liquid so you’ll need either less flour or more liquid. Can impart a coconut flavor to your recipes. Best for cakes and muffins.
  • Flax Meal: Best for cakes, breads, muffins. May impart a nutty flavor to your recipes.
  • Chia Flour: Not as commonly used, but can be added alone or as a flour blend to your recipes. Best for breads, cakes, and muffins.
  • Psyllium Husk Powder: Adds a light and airy element to recipes without changing the flavor. Will need to be combined with other low-carb flours in some recipes. Best used in breads, but can also act as a binder or substitute for eggs.

Sugar Alternatives

  • Stevia: Plant based sugar substitute. Can be used in place of sugar in most recipes.
  • Monk Fruit: Harder to find but great to use. Can sometimes have a strange aftertaste.
  • Erythritol: A natural sugar alcohol that is used as a sugar substitute. You’ll need slightly more than you would use with regular sugar as it is not as sweet. Doesn’t dissolve easily.
  • Xylitol: Similar in sweetness to regular sugar, this sugar-alcohol can be used in most keto dessert recipes but may increase dryness in large amounts.
  • Sucralose: An artificial sweetener often sold as Splenda. Much sweeter than sugar so you’ll only need a small amount. Best used in cold desserts as it is not meant to be exposed to high temperatures.
  • Allulose: Keto-friendly sweetener best used in breads, candy, marshmallows, sauces, ice cream, cookies, and more.

What Not To Use For Desserts On A Keto Diet

A few to avoid include aspartame and any alternative sweetener made with it; natural sweeteners like honey, agave, maple syrup, dates and date syrup, or molasses; most fruit juices; maltodextrin; coconut sugar; brown sugar.
